Best Low-Carb Recipe Ever – Stuffed Mushrooms

Congratulations to "Bucarpenter" on her winning dish, "Brie and Pistachio Stuffed Mushrooms!"  Once you try this low-carb recipe it is sure to be a staple on your holiday party menus.

Often, stuffed mushrooms are filled with breadcrumbs, but this winning recipe offers a genius low-carb solution!  Pistachio nuts are coarsely ground in a food processor to mimic the traditional breadcrumb texture.

Then, all you have to do is combine the pistachio "crumbs" with cubed brie cheese.  (By the way – pistachio and brie is a match made in flavor heaven!)

After the mushrooms have been cleaned and stemmed, simply stuff with the pistachio-brie mixture.  Pop them in the oven and 15 minutes later you have an appetizer to wow your guests!
