The very popular avocado thread last week got us dreaming about our favorite avocado sandwich at our favorite beach cafe. The Mozzacado is an odd yet sublime mix of avocado spread with pesto on a classic tomato-mozzarella sandwich. We whipped one up for lunch yesterday, substituting fresh, spicy basil leaves for the more refined pesto. We offer the formula below - more by way of inspiration than as an actual recipe. Try it sometime — it's a delicious summer lunch. Mozzacado SandwichServes 2 4 thick slices sourdough bread, lightly toasted While the bread is toasting, smash the pitted avocado with a little salt and pepper, and spread it on the warm bread.
