Pizza on the Grill: No Oven, No Problem!

I always thought pizza was the ultimate kids' food until I met my husband.  When he was a child, he wouldn't eat pizza. How strange is that? Yes, it's weird but I do love him anyway.

Once he reached his teenage years, something changed and by college he couldn't get enough of the stuff.  I am not sure if they allow non-pizza eaters in college anyway, as I never met one myself. All I know is that my family loves pizza. Since it has everything from the four food groups, it is on our menu once a week. I consider it the perfect food.

We tend to order pizza frequently, but my kids love to make it at home too. Since I have been without a kitchen for the last month, there has been no pizza baking in my oven. It is easy to make flat bread pizzas, but sometimes you want the real thing. But who says I can't make some pizza on my grill?  Grilled pizza is easy to make, and definitely delicious.

I used store-bought dough and divided it up into 4 pieces to make smaller personal pizzas. The dough is rubbed with some olive oil and baked right on the grill. It gets turned over to cook evenly. The kids put on some delicious toppings and pizza night is always a success.

While I would prefer goat cheese and pear pizza, pepperoni is always a favorite in my house.  This homemade No-Knead Pizza Dough Recipe can also be used and after my kitchen renovations are done, I will be a little more ambitious to make it.

Have you ever tried grilled pizza? If you haven't, I advise that you rent a good movie and make pizza with your family as soon as possible! 

Ingredients

  • no-knead pizza dough, or 16 oz refrigerated pizza dough
  • 2 tablespoons olive oil
  • 1 cup pizza sauce
  • 1 cup mozzarella cheese, shredded
  • 1/3-1/2 cup pepperoni, chopped
  • 2 tablespoons fresh basil, chopped

Directions

  1. Spray a gas grill with cooking spray. Preheat the grill to medium heat.  Divide pizza dough into four equal rounds. Roll into pizza rounds getting the crust as thin as you can.
  2. Brush the olive oil on the pizza dough. Cook on the grill for about 2 to 3 minutes on each side or until dough has nice grill marks and becomes puffy. Remove dough from grill and turn heat to low.
  3. Spoon an equal amount of sauce on each pizza dough. Top with cheese and pepperoni.
  4. Place pizzas back on the grill and heat for a few minutes or until cheese is melted. Make sure the crust doesn't burn.
  5. Top with basil just before serving.

Notes

Use as much pepperoni as makes you happy. (Or any topping, for that matter.)
