Whenever someone comes to me looking for canning recipes or for more information about the science behind canning, I always recommend that they purchase what I consider to be the "canning bible" - the Ball Complete Book of Home Preserving.
It's especially important as a new canner to make sure that you always follow a recipe from a trusted source - learning good canning practices from the beginning is essential to ensure that your canned products will be safe. Also, as one who almost solely relied on this book when I started learning how to can, I can say from experience that the clear, step-by-step instructions and helpful tips made learning how to can much less intimidating.
The Ball Complete Book of Home Preserving is a great resource for new and experienced canners alike. There are many other books out there of course, and a lot of them are wonderful for inspiration - but this is my go-to resource whenever I need an answer to a canning problem or am concerned about the safety of a recipe I've found elsewhere.
It has information about the science behind canning and how to can safely according to USDA guidelines, troubleshooting for common problems, and it includes hundreds of recipes for both classic and creative recipes for jamming and pickling. If you're looking for a comprehensive guide to canning, I highly recommend this book!
