Buttermilk Mashed Potatoes and Dreamfarm Giveaway

Having a great mashed potato recipe for your cooking arsenal is always smart. It is easy to make up a large batch of mashed potatoes for family get-togethers or holidays, and everyone is sure to be full and satisfied. Once the weather begins cooling off, I always crave mashed potatoes as a side dish to complete a tasty, comforting meal.

Roasted garlic mashed potatoes with asiago (or parmesan) cheese and buttermilk is my favorite go-to recipe that I make throughout the year and also for every Thanksgiving. It is also a great recipe to use for making this shepherd's pie recipe!

And let's be honest, these delicious mashed potatoes can easily turn from "side dish" to "entree" given how tasty they are.

Like most recipes, using helpful kitchen tools ensures a great result every time. I've been loving all of my Dreamfarm kitchen tools. Each tool has multiple functions, comes with a fun name, and is available in various colors to match the rest of your kitchen.

For instance, for this recipe, I used the Dreamfarm Vebo for boiling the potatoes and simply lifted it out of the pot to strain the water. This tool can also be used for steaming veggies, which is perfect for preparing broccoli (or other vegetables) during the work week. I also used the Smood which is used for smoothing and mashing potatoes. Using these items was easy, fun, and facilitated the recipe.

Ingredients

  • 8-10 white potatoes, 5 cups worth when mashed
  • 1 head garlic, roasted
  • 1 1/2 cups aged asiago cheese, grated
  • 1/2 teaspoon salt, or more to taste
  • 3 tablespoons green onions, chopped, plus more for serving
  • 2 tablespoons butter
  • 3/4 cup buttermilk

Directions

  1. Preheat the oven to 400°F. Wrap the whole bulb of garlic in aluminum foil and roast in the oven for 30 to 40 minutes or until the cloves feel soft. 
  2. Remove from the oven. When cool enough to handle, remove the skins from each clove of garlic and chop the cloves. Set aside.
  3. While the garlic is roasting, bring a pot of water to a full boil.
  4. Chop the potatoes into large chunks and place them in a steamer. Place the steamer with the potatoes into the pot of boiling water. Cook for 20 minutes or until potatoes are soft when poked with a fork.
  5. Add all of the ingredients to a large pot and mash the potatoes using a potato masher (do this while the potatoes are still hot so that the cheese and butter melts).
  6. Pour the mashed potatoes into a large serving dish and garnish with green onion.
