Apple and Thyme Mashed Potatoes

Thanksgiving is just weeks away and our series, "Mashed Potato Month" continues!  This recipe certainly deserves a spot on your menu this Thanksgiving.  It sounds elaborate, but is actually very easy to prepare.

When making these "Apple and Thyme Mashed Potatoes" I recommend using a tart apple, such as a Granny Smith.

The apples are sautéed in butter on the stove top and then roughly mashed.  The mashed apples as well as some fresh time leaves are then folded into a classic mashed potato preparation.

 Slices of apple and additional sprigs of thyme garnish this dish to be picture perfect!

It is wonderful along side turkey at Thanksgiving, but it also pairs well with pork dishes or holiday ham.
