A seasonal sweet and spicy take on a hummus dip!
This recipe is made with traditional hummus ingredients, but with one interesting twist – roasted winter squash.
Keep reading for the recipe…
Start by roasting your favorite winter squash (butternut, acorn or pumpkin all work great) then blending it with garbanzo beans, olive oil, garlic, sesame seeds. a little vegetable broth for moisture, and a hint of cayenne pepper for heat.
To serve, drizzle with additional olive oil and sprinkle with pumpkin seeds and a dash of cayenne. You can certainly serve this with warm pita, but I found it tastes great with my favorite Finn Crisp Rye Crackers. There's something about the hearty taste of the cracker with the sweet and spicy hummus that works perfectly together!
