Sad news, people.
For a while, I gave up on chocolate and peanut butter. I was tired of it. I wanted new flavors. I tried to expand my world and broaden my horizons and all that crazy talk that basically means leaving behind the things you love best to find things you'll love more.
Such a stupid idea. There is nothing better than chocolate and peanut butter! That is a fact, and I have proved it. Don't ask me for my proof, because I am not a scientist and I don't know how to prove things. I'm just a girl. With a love for dessert.
Anyway, I am back in full force. We even had this Chocolate Peanut Butter Pie for dessert the other day. Um, yeah. I think that was what knocked me back in love with this flavor combo. So, so good!
I made these Chocolate Peanut Butter Shortbread Bars last night. My husband proposed to me again. Apparently he had been missing his delicious peanut buttery desserts!
These bars are, quite simply, amazing. I dunno about you, but I'd eat just about anything if it was sitting atop a shortbread crust. Shortbread is just so buttery that it makes everything taste better!
I whipped up a simple peanut butter ball type mixture to spread on top of the cooled shortbread and then topped it with melted chocolate chips. I sprinkled on a bit of Fleur de Sel for a fun, salty twist.
The whole family loved these, but I shipped most of the batch off to work with my husband. Sometimes a dessert is so good that it just has to leave the house before I inhale it all myself. We had to do the same thing when I made this Peanut Butter Chocolate Brownies recipe too!
Chocolate Peanut Butter Shortbread Bars Recipe
Ingredients
For the Shortbread:- 2/3 cup butter, softened
- 1/4 cup granulated sugar
- 1 1/4 cups all-purpose flour
- 1 cup creamy peanut butter
- 1 cup powdered sugar
- 1/4 teaspoon salt
- 1 1/2 cups milk chocolate chips
- 1/2 teaspoon kosher salt, or fleur de sel for sprinkling on top
Directions
For the Shortbread:
Preheat the oven to 350°F.
In the bowl of a stand mixer, beat together the butter, sugar and flour until crumbly.
Press into a 9x9 baking dish and bake for 20 minutes.
Cool completely before adding the peanut butter layer.
To make the peanut butter layer:
In the bowl of a stand mixer, beat together the peanut butter, powdered sugar, and salt until well combined. Press on to the shortbread crust.
To make the chocolate topping:
In a medium microwave safe bowl, microwave the chocolate chips on low power until melted, stirring every 30 seconds. Spread the melted chocolate over the peanut butter mixture and sprinkle with a bit of salt, if desired.
Let bars set for at least 1 hour before slicing and serving.
