What makes this recipe so easy is that you can use a 1 pound bag of baby carrots that are already cut and peeled. My favorite ones come from Grimmway Farms. Baby carrots are full-grown, young premium carrots that are cut, peeled and packaged to make eating carrots easy, portable and enjoyable. I like that they are an easy shortcut for this recipe!
After steaming the baby carrots, you simply layer them in a clean canning jar with a few bay leaves. Then you prepare a simple pickling liquid and pour it over the carrots. The marinated carrots are then kept in the refrigerator for at least 2 days our up to 2 or 3 weeks. Wrap it up in a bow, and you have a healthy homemade gift that everyone will love and appreciate!
