The last weekly contest of 2013 was our "Best Holiday Dessert Ever" challenge. The entries were not only fantastic recipes for Christmas or New Year's, but really for any celebration all year long! The winning recipe comes from "LisaKeys64" for her Peppermint Lava Cakes.
I think these decadent mini cakes would be perfect for Valentine's Day! (Yes, it is right around the corner!)
Keep reading for the recipe…
Lava cakes, also known as molten chocolate cakes, are individual-sized desserts with a surprise inside. They are baked in 1-cup ramekins until the edges are just set. For serving, the cakes are turned upside down onto a plate and the ramekin is removed. The moment your fork breaks open the outer crust to take that first bite, ooey gooey molten chocolate "lava" pours from the inside of the cake.
This dish never fails to impress, and no one has to know how easy they are to make! This version calls for a scoop of ice cream and a garnish of crushed peppermint candies. You can feel free to experiment with your own favorite flavor combinations!
