Gluten-Free Coconut Cake with Fresh Berries

This week, "Red, White and Blue" recipes are everywhere!

If you are gearing up to celebrate the 4th this weekend and have guests with dietary restrictions, this decadent dessert is the perfect addition to your menu.  It is an easy and gluten-free coconut cake topped with colorful fresh berries.   Even if your guests aren't gluten-free, I guarantee they will love every bite!

This dessert can be whipped up and ready to enjoy in about 45 minutes.  It is a "flourless" cake that uses unsweetened coconut flakes and a bit of ground almonds, along with eggs and egg yolks as a binder.  The cake comes out of the oven a beautiful golden color and is topped with red and blue berries.  You can even add a dollop of whipped cream or a scoop of ice cream to round out the "red, white and blue" theme!
