I've always thought that kiwis are one of summer's most beautiful fruits. That gorgeous green, the tiny seeds, the sunburst from the center. So much love. Unfortunately, I usually buy a carton of them, eat a few like apples, and then forget the last two or three in a bowl on the counter, buried beneath a fresh batch of peaches or plums.
Last week, in an effort to enjoy every last kiwi, I created this creamy, coconut-drenched smoothie — satisfying, laced with fresh lemon, and bursting with kiwi flavor.
This smoothie is packed with energy and nutrients. The avocado and coconut milk fill you up with healthy fats (a prerequisite for long-lasting energy), the lemon loads your immune system with vitamin C, the coconut water hydrates, and kiwis are basically little green vitamin bombs all on their own.
Full of protective antioxidants, rich in fiber and potassium, great for eye health, and a tasty source of potassium (think happy heart and healthy blood pressure), kiwis make great snacks... and, of course, smoothies.
Creamy Coconut Kiwi Smoothie
Serves 1, generously
2 kiwis, peeled and quartered
1/2 avocado
1 cup coconut water
2 tablespoons canned coconut milk
1 lemon, juiced (more to taste)
4 to 5 ice cubes
Place all ingredients in a blender and blend on high until smooth and creamy, about one minute. Serve over ice.
