Recipe: Korean Shaved Ice Dessert — Recipes from The Kitchn

It's summer and I'm whipping out all kinds of sweet deliciousness today! If you're a fan of sweet red beans or Azuki bean paste, you will love this Korean spin on shaved ice.

Korean Shaved Ice (or Patbingsu in Korean) is not only refreshing and delicious but it's also fun to eat! Similar to Hawaiian shaved ice and snow cones, this Korean dessert starts with shaved ice but is topped with a variety of fresh chopped fruit, sweetened condensed milk, sweet red bean paste, mochi and sometimes, ice cream and colorful cereal like Fruity Pebbles for fun.

It's summer and we've been on a DIY dessert kick. From homemade popsicles, to Japanese taiyaki to ice cream, we've been doing it all. So we weren't going to stop there. My husband and I grew up eating Patbingsu and wanted to make some for our kids so recently, we purchased an electric shaved ice machine. The best $29.95 we've spent this summer!

If you'd had Patbingsu before, you know how delicious this dessert is and now you can make this at home! If you don't have a shaved ice machine, you can try using your blender with large cubes of ice but you won't get the exact same results and texture; your ice will be more crunchy. The shaved ice machine gives you texture like soft, fluffy snow. So, if you can get your hands on one, I highly recommend using a shaved ice machine. Plus, you can also make snow cones, margaritas and more!

Korean Shaved Ice Dessert

Serves 2

4 cups shaved ice; split
2 tablespoons sweetened condensed milk
4 tablespoons Prepared Azuki sweet red beans
1/2 cup strawberries, hulled and chopped
1/2 cup peaches, chopped (skin on)
1/2 cup kiwifruit, peeled and chopped
4 pieces of Red bean mochi or ice cream mochi balls
2 scoops ice cream (any flavor)
Fruity Pebbles cereal for fun

Using your electric shaved ice machine, fill your bowl with about 1 cup of shaved ice. Drizzle on 1 tablespoon of the sweetened condensed milk and top with another cup of shaved ice. Top the shaved ice with 2 tablespoons of the sweet red beans in the middle and begin adding a 1/4 cup of each of the chopped fruit, strawberries, peaches and kiwifruit, around the bowl.

Top with the red bean mochi or ice cream mochi balls, one scoop of your favorite ice cream and Fruity Pebbles cereal for fun. Repeat steps for the second serving and enjoy.

Recipe Notes

  • You can use the sweet red bean paste or the prepared canned version where the beans are left whole. Both can be found at any Asian market.
  • Korean cafes will often serve Patbingsu in a large bowl to share so feel free to make one large dish, pile on the toppings, grab some spoons and enjoy with your friends.
