The kids are enthralled with Panera Bread. Personally, I'm happy that we no longer have to dine on chicken nuggets and French fries when we go out to eat! Finally, my kids have refined their tastes. Sort of. When we do go to Panera Bread, they order pasta, grilled cheese and PB&J. I'll be honest, I don't like it. I mean can't they pick something we don't already make at home?

I go for the Thai flavored foods and the fancy soups. But the kids keep it simple. Nothing gets simpler than a PB&J right?

I used to be a big PB&J girl. I always had a huge glob of strawberry jam (never grape) on my sandwich and a teeny dab of peanut butter. I loved the sweet jelly more than the peanut butter. Over time, my ratio has seen significant change. I've gone from loving the sticky sweet jelly to banning it all together. 

There's absolutely nothing wrong with jelly. I like jelly on my toast and on my bagels, but not in my peanut butter sandwich. Instead I'll take honey, bananas, apples and now apple pie filling! Yep, pie filling is the way to go.

The sweet, cinnamon infused apple pie filling sort of melts right into the peanut butter as it is getting grilled to perfection. The apples get soft, as if they were in a big piece of pie. The heat from the bread makes the peanut butter warm and happy. Mmm, mmm, mmm!

I found cinnamon swirl bread works really well with this sandwich. You could use your favorite, of course. I used whipped peanut butter that I mixed with whipped cream cheese (the cream cheese cuts the sweetness and make the peanut butter especially melty). So there you have it. My new favorite peanut butter sandwich. It's a PB&A!

I know this sounds a bit unconventional. It is, which is the way I like it. If you haven't tried a grilled peanut butter sandwich, do yourself a favor and go for it! You will love it. And don't forget the apple pie filling!

Ingredients

  • 4 slices cinnamon swirl bread
  • 2 teaspoons butter
  • 1 cup apple pie filling
  • 1/4 cup whipped peanut butter
  • 2 tablespoons whipped cream cheese

Directions

  1. Heat a skillet over medium heat. Butter one side of two bread slices with a 1/2 teaspoon of butter.
  2. In a small bowl, combine peanut butter and cream cheese until combined.
  3. Place two slices of bread, buttered side down onto hot skillet. Top with 1/2 cup apple pie filling. Spread remaining slices with peanut butter mixture. Place peanut butter side down over apple slice. Butter top side of bread slice.
  4. Toast sandwich 3-4 minutes per side or until golden and heated through.
