I feel rather fortunate that my husband's office does not have an annual Christmas party. He and his coworkers have a few drinks to commemorate the season and then they are done. Short, sweet and spouseless. I am not good at other people's Christmas parties. The small talk gets me. Sometimes you just run out of small talk, you know what I mean? After you talk about how old your kids are and how they are doing in school and sports the conversation turns to pets. Once you exhaust the subject of Fido and all his crazy antics the only thing left to talk about is the weather. When you reach that point, it's time to go.

As the spouse, you have to smile politely, be gracious and try desperately hard not to drink too much. No one wants to be the embarrassing spouse that gets talked about at the next staff meeting. So what do you do? You stand by the snack table and eat. You can't talk with a mouthful of dip, that would be impolite! So that's my policy. More food=less small talk. But that's ok, because party food is the best.

I love party food. There are trays full of food that you normally don't get to indulge in. Dips, canapés, crudités, finger foods, desserts and if you're lucky; dinner. If the party has a good slider, well then, that is all I really need.

These little chicken meatball sliders are absolutely the best party food. Small enough to be an appetizer, but big enough to be part of the meal. I rested these little meatballs on a creamy homemade jalapeno white bean dip. The hot meatball melts right into the bean dip and almost makes a perfect sauce. You don't have to use my bean dip recipe, though. Store bought dip or even white bean hummus with chives will work well. My only advice is to make extra sliders. The spouses will need them!

Ingredients

For the Meatballs:
  • 2 pounds ground chicken
  • 1/2 cup fresh parsley, chopped
  • 1 teaspoon oregano
  • 1/2 teaspoon paprika
  • 1/2 teaspoon salt
  • 1/4 cup grated parmesan cheese
  • 1/2 cup panko breadcrumbs
For the Sliders:
  • 3/4 cup white bean dip
  • 1 cup arugula
  • 2-3 avocados, chopped
  • 6 roma tomatoes, sliced
  • 24 slider buns

Directions

  1. Preheat oven to 400°F.
  2. In a large bowl, combine ground chicken, chopped parsley, oregano, paprika, salt, Parmesan cheese, and bread crumbs. Mix by hand until just incorporated.
  3. Shape in large, golf ball sized meatballs. Bake for 15-20 minutes.
  4. Place 1/2 tablespoon of bean dip on the bun of each slider.
  5. Top with meatball, arugula, avocado and tomato. Pierce with a toothpick for ease of serving.
