Let's talk about breakfast. Do you love it? Hate it? I've got almost a love/hate relationship with breakfast. Weird, I know. Who has a love/hate relationship with a meal? Is that even normal? This is my life… #sorrynotsorry

Anyways, I make a lot of breakfast food to keep handy for my husband to grab, heat and go in the morning because he is always running late. At least he makes my coffee before he goes. Thanks, bae.

So even though I've always got a lot of great options for breakfast, I probably only eat breakfast three days a week. Maybe two. I know, horrible. Breakfast is the most important meal of the day, blah blah blah. I get it.

I totally understand the benefits of eating a breakfast, and why you should, and what you should have. I have coffee – with sugar and coffee creamer. So there're calories in it, which makes coffee a breakfast. Right? Ugh, I wish.

Here's the thing, it's a new year. We all need a resolution. This year, mine is to eat breakfast almost every day. I would say every day, but I know there will be a day where I'm crazy busy and I'll forget to eat it and boom, my resolution is busted. Over. #fail. So, to avoid failure in the very first week of the year, I'll give myself a little wiggle room.

One thing that might help me eat breakfast more often is to incorporate some of my favorite things, like chocolate and coconut. So I made chocolate coconut overnight oats. I did manage to keep these relatively healthy though by using unsweetened coconut milk, no refined sugar and unsweetened coconut. The chocolate chips are for sanity.

I really do love breakfast food - even despite my ramblings on not eating breakfast. One breakfast that I do enjoy on those few days I eat it, is overnight oats. They're really quick to throw together the night before, and there are so many flavor combinations you can make. Apparently, I really like chocolate in my overnight oats, because I've also made them with Nutella and a Black Forest version. Both wicked delicious.

These chocolate coconut overnight oats are right up there though. I really love the extra coconut and the little crunch the mini chocolate chips add. The textural difference is great. You can also adjust the level of sweetness to your own tastes by adding more or using less honey. If you love coconut, you'll be sure to like these chocolate coconut overnight oats. Enjoy!

Ingredients

  • 1 cup certified gluten-free oatmeal
  • 2 tablespoons unsweetened coconut flakes
  • 1 cup coconut milk
  • 1 tablespoon unsweetened cocoa powder
  • 2 tablespoons honey
Optional garnish:
  • unsweetened coconut flakes
  • mini chocolate chips

Directions

  1. Combine oatmeal, shredded coconut, coconut milk, cocoa powder and honey. Mix well. Cover and refrigerate 8 hours or overnight.
  2. To serve, mix well and top with flaked coconut and chocolate chips if desired.
