Red Velvet Waffles

I love red velvet anything, and these red velvet waffles are no exception. They're such a fun treat for a weekend or holiday breakfast! Red velvet always makes a surge around certain holidays. Christmas, Valentine's Day and the 4th of July always seem to have a ton of fun red velvet foods attached to them.

I mean, what's more festive and celebratory than food that can match your décor?! I, being a bit OCD, happen to enjoy when my food can match my plate, cup, napkins and the rest of the tablescape. Who's with me on that? Or am I sounding a little alone and sad? I know there's got to be someone out there who appreciates my need and love of the absolute perfection that happens when food and table are all perfect and the same. Anyone? …

Red velvet is one of those things that has creeped up on the food world and taken over. Red velvet is a  classic cake from the post-depression era that has become increasingly popular in recent years.

What started as cake and cupcakes has now evolved into cake pops, pancakes, muffins, donuts, brownies, fudge, whoopee pies, drinks, cocktails, cookies; basically everything and anything can be "red velveted".

You know how Bubba could recite hundreds of shrimp based dishes? Well, now we can do the same with red velvet. And that's a reference to Forrest Gump, in case you're like my sister and have NEVER seen it. That's right, she's never seen Forrest Gump. And she lives under a rock.

Just kidding about the rock. But not the movie.

This recipe was adapted from Sarah Hearts blog, she makes hers with regular all-purpose flour. I used my gluten-free all-purpose flour mix to make it gluten-free since my husband can't have gluten. You can make it either way but just be sure to omit the xanthan gum if you're not using gluten-free flour.

Whether you make these gluten-free or not, for a holiday or for a regular old day, enjoy!

Ingredients

  • 2 cups all-purpose flour, or gluten free all purpose flour
  • 1 teaspoon xanthan gum, omit if using regular all purpose flour
  • 3 tablespoons granulated sugar
  • 1 tablespoon unsweetened cocoa powder
  • 4 teaspoons baking powder
  • 3/4 teaspoon fine sea salt
  • 1 3/4 cups milk
  • 2 tablespoons white vinegar
  • 2 eggs
  • 1/4 cup butter, melted
  • 2 teaspoons pure vanilla extract
  • 1/2 ounce red food coloring
  • powdered sugar, for topping

Directions

  1. Prep and pre-heat waffle iron according to manufacturer's directions.
  2. Combine milk and vinegar, set aside and let sit for 5 minutes.
  3. In a large bowl, sift together flour, xanthan gum (if using gluten-free flour), granulated sugar, cocoa powder, baking powder and salt. Stir to combine.
  4. In a separate bowl, whisk together milk/vinegar, eggs, butter, vanilla and food coloring. Gently stir into the dry ingredients and mix well until fully incorporated.
  5. Cook waffle batter in the greased waffle iron based on manufacturer's suggested cooking times. I use about 1/2 cup of batter per waffle. The number of waffles made will depend on how large your waffle iron is and how much batter you use for each waffle.
  6. Sprinkle powdered sugar on the cooked waffles and serve with maple syrup.
