I will totally admit to anyone that I am a big baby when it comes to my birthday. I want surprises and presents and I want everyone to know it's my birthday. Yes, despite the fact that I am now in my 40s, I still like to be treated like a 6-year-old princess. Unfortunately for me, my family doesn't treat me like a 6-year-old princess, but like a 40-year-old mom of three. It's quite disappointing.
The one thing that we do each year for my birthday is have a tea party. There is a quaint little café that not only makes exquisite cakes and pastries, but also serves the perfect meal for a tea party.
Each person (adult or child) is given their own teapot and tea cup to be filled with their beverage of choice. All the china is mismatched and eclectic, which adds to the ambiance and the experience.
When we are finally served, the food is presented on a three-tier tray. The top tier holds date bread, scones and fruit. The second tier is piled with turkey, tuna and cucumber sandwiches-all the crusts cut off of course. Finally the bottom and largest tier is loaded with the best sweets imaginable.
There are things we all love, like mini cupcakes and macarons, shaped cookies with royal icing, whoopee pies and fruity tea cookies. We literally fight over each sugared treat. I always win however, because after all, I am the birthday girl. I can live without being treated like a princess but I cannot live without dessert!
I made these tea sandwiches in honor of our annual tea party experience. These little sandwiches are so light and simple. I used very thin white bread and trimmed off the crusts. The filling is a creamy blend of tangy feta cheese, mild cream cheese, mayo and fresh basil. A crisp, cool tomato adds freshness.
These tea sandwiches were so good; I may have to rethink our whole tea party reservation this year. Perhaps I'll make my own tea party and put the money I save towards a day at the spa instead! Yes, I think I like that idea.
Tomato Feta Tea Sandwiches
Ingredients
- 16 slices very thin white bread, i used pepperidge farm
- 4 ounces feta cheese, crumbled
- 4 ounces cream cheese, softened
- 3 tablespoons mayonnaise
- 1 tablespoon fresh basil, chopped
- 2 roma tomatoes, thinly sliced
Directions
- Combine feta cheese, cream cheese, mayo and fresh basil.
- Cut the crust off of each slice of bread. Spread a generous spoonful of cheese mixture (about two tablespoons) on one slice of bread. Top cheese with one slice of tomato. Cut each sandwich into triangular halves. Serve immediately.
