My family went for months without buying donuts. They are considered a treat around here. Sure cupcakes and cookies are treats too, but they happen much more often than donuts. All that changed two months ago.
My son said a girl in his class was moving and she brought in donuts from her grandmother's store as a good-bye treat. My son claimed they were the best he's ever eaten and that we needed to try them for ourselves. He didn't have to twist our arms much because that weekend we found ourselves staring at the donut counter before the sun even came up.
My son wasn't kidding; those donuts were the best! Lemon, Butterfinger, cinnamon, coconut, caramel, powdered, glazed… you name a flavor, she had it. They were soft, tender, cake donuts with the perfect amount of sweet toppings. They were so good; we've been back six out of the eight past weekends. I think we have a problem.
I decided to go to war with this donut addiction. I need a savory weapon to combat those tasty cakes. My solution? A breakfast sub. These sandwiches are the polar opposite of what a donut can provide. This sandwich has crispy bacon, maple flavored sausage links, melted cheese, a tender bun and a fried egg right on top. This is the kind of sandwich that will keep you full all day.
While it may sound like a bit excessive, (I ask, is a donut better?) there are ways to lighten this baby up. Turkey bacon and sausage will work just as well, omit the cheese or add an avocado instead. It's all good!
I'll admit the family was a little hesitant to dig in; I mean they were used giant donuts for breakfast, but it only took one bite for everyone to agree that this was a good sandwich! For this breakfast for dinner family, this breakfast sub makes one heck of an evening meal!
I can't say we've eliminated our beloved donuts; we have just balanced them out with something deliciously savory instead!
Sausage Egg Breakfast Subs Recipe
Ingredients
- 4 coney-style rolls, (split on the top)
- 2 teaspoons butter
- 4 slices cooked bacon
- 8 breakfast sausage links
- 4 eggs
- 4 slices cheddar cheese
Directions
- Heat a medium sized skillet over medium heat. Add sausages. Cook sausage until no longer pink.
- Heat a second skillet over medium heat. Spread a scant half-teaspoon of butter over each side of the Coney roll. Place Coney roll on hot skillet, heat each side of the roll or just until golden brown then remove bread from skillet. Place one slice of cheese inside each bread roll. Set aside.
- Spray the same skillet with non-stick spray. Add eggs. Cook eggs for 2-3 minutes, depending on desired degree of doneness.
- To assemble; place 2 hot sausage links on each of the 4 cheese slices; top with bacon. Place cooked egg on the top of each sub roll and serve.
