My husband and I have a standing date night every Thursday night. Each week we head out down the block to our favorite upscale pizza restaurant and bar. We go so often that we've become friends with the Thursday night bartender and the owner.
Without fail, each Thursday you can also predict what the two of us will end up ordering — the gorgonzola and pineapple pizza for him and hot sopressata pizza for me. To drink, rounds of beers (him) and bourbon cocktails (me). When did life become so predictable? Is this what happens when you've been coupled for 12 years or you finally find your regular restaurant (truth it was also a goal to a be regular somewhere)?!
I'm not complaining at all! I love our Thursday nights out; I start thinking about pizza choices somewhere around mid-day but in my mind I know it'll end up being the same as I also do. Then it dawned on me, it's just not my pizza choices that are predictable — it's me. I like what I like and I stick to it with just a slight variation here and there.
Prime example this Mango Moscow Mule. This isn't the first time I've brought a Moscow Mule to the table, there has been Pear Pomegranate and Blood Orange and I guarantee a few more in the future. Like I said, I like what I like and I like the combination of fruit, ginger beer, a touch of citrus and vodka. Here in this case we've put a summery twist to our mule with fresh, in-season mango blended together for a smooth and sippable cocktail to enjoy on the hottest days.
Mango Moscow Mule Recipe
Ingredients
- 1/4 cup cubed fresh mango, plus more for garnish
- juice from half a lime
- 1 1/2 ounces vodka
- ice cubes
- 4 ounces ginger beer
- lime slices, for garnish
Directions
- Place the mango, lime juice, and vodka in a blender and puree until smooth.
- Pour the mango puree into a copper mug or Collins glass, fill with ice and top with ginger beer. Garnish with mango and lime slices.
