As we move more into the summer months, I tend to purchase more and more fresh foods, do you? The farmer's market is high on my list of stops each week as is the fresh market grocery store. It's no secret that fresh food just taste so much better. I also find that fresh food inspires me more to get in the kitchen and really explore different flavors.

I picked up fresh strawberries over the weekend and immediately whipping up a tasty strawberry salsa was on my mind. Strawberry salsa can be made a variety of ways using what you have on hand. I decided to use strawberries, avocado, onion, a hint of lemon, cilantro, and olive oil.

This combination gave the chicken a light and delicious flavor. It is so wonderful to just sit back and enjoy dinner out on the patio and this is one of those dinners that is perfect for just that. In Oklahoma during the summer it's basically either early morning or late evening that you can go outside, so when I can find a cooler day to sit outside and enjoy dinner, it's heavenly!

Another bonus for us is we have recently discovered that my daughter seems to have outgrown her strawberry allergy that she had as a baby, so that means strawberries are becoming more prominent again in our home. We've been on a strawberry hiatus, so it's nice to be able to bring them back and incorporate them into meals again.

This strawberry salsa can also be served as is with a side of tortilla chips too. It's a delightful change from a traditional salsa.

Are you growing strawberries in your garden? I've been tempted to buy strawberry bushes each year to grow our own; however, I'm not sure if they would last or not. If you have experience growing your own, I'd love to hear it.

Strawberry Salsa Chicken Recipe

Ingredients

  • 1 pound strawberries, sliced
  • 1 avocado, chopped
  • 1/4 cup diced onion
  • 1/2 cup chopped cilantro
  • 1 1/2 teaspoons olive oil
  • 4 chicken breasts, 6 ounces each
  • salt and pepper, to taste

Directions

  1. In a medium-size bowl, combine the strawberries, avocado, onion, cilantro, and olive oil.
  2. Mix this well and sit aside.
  3. Warm up a greased skillet to medium-high heat.
  4. Lightly add salt and pepper to the chicken breast to your preference.
  5. Sear and cook on each side until the internal temperature reaches 165°F.
  6. Serve chicken topped with salsa; add salt or pepper to taste if preferred.
