Ingredients - 2 tablespoons Olive Oil, divided
- 8 ounces Shrimp, peeled and deveined
- 2 cloves Garlic, chopped
- 1/2 cup Chopped Red Pepper
- 8 ounces Smoked Sausage
- 6 cups Bok Choy, or other greens, cleaned and chopped
- 1 teaspoon Cajun Seasoning, more or less according to taste
Directions - Heat 1 Tablespoon olive oil in a large skillet on high heat. Add shrimp to skillet and cook until just opaque, stirring often, about 5 minutes. Transfer shrimp to a plate.
- Add the remaining 1 Tablespoon olive oil to skillet and sauté garlic, pepper and sausage. Cook for about 5 minutes then add greens. Cook for 5 more minutes on medium heat.
- Add shrimp back to skillet and sprinkle with Cajun seasoning. Add chicken broth, stir mixture, cover and bring to a simmer.
- Serve with rice if desired.
