Ingredients - 1 large Yellow Squash
- 1 cup Skim Milk
- 2 cups All-Purpose Gluten Free Flour
- 2 Eggs
- 2 cups Gluten Free Bread Crumbs
- 1/2 tablespoon Salt
- Olive Oil Cooking Spray
Directions - Preheat the oven to 425°F.
- Thinly slice the yellow squash into rounds.
- Place the squash in a 9x13 baking dish and pour the milk over it to soak for about 10 minutes.
- Prepare another bowl with the flour.
- Prepare a second bowl with the eggs, whisk them well.
- Lastly, prepare a bowl with the gluten free breadcrumbs and salt.
- Dip each slice of squash into the flour then into the egg and coat with the breadcrumbs.
- Place the squash on a broiler pan.
- Spray it evenly with the cooking spray.
- Bake for 15 minutes or until browned, serve with additional salt if desired.
