I love the rustic style of this French Peasant Bread. It isn't fussy and the feeling of accomplishment when you take that first bite is beyond compare.
All you have to do is combine water, yeast, salt and sugar in a bowl. Stir in bread flour and let it rise. Once it doubles in size, divide the dough and place it in an 8-inch cake pan*. Let it rise one more time brush each loaf with butter and bake.
*Since I love this recipe so much, I have tried baking it several ways. I started by making it free-form in an oblong loaf as the recipe describes. Then I tried it in a long, thin French-style loaf pan. For me, my favorite was baking the bread in rounds using cake pans. Feel free to experiment and see which shape you like best!
