Hi, Food Fanatic fans, Jocelyn from Inside BruCrew Life with you today. I am super excited to be one of the new breakfast contributors here at Food Fanatic. Now I feel I should be honest with you and tell you that I am not a morning person, so most…ok, all the breakfast things I create happen in the afternoon or evening in my kitchen.

This ensures that I keep all my fingers and breakfast does not get burned. I have learned over the years that a half asleep mom does not do breakfast very well. Afternoon baking sessions are better for all of us involved.

Our kids are just as sleepy as me in the morning and do not like taking a lot of time to make breakfast. As long as I keep stuff like banana bread muffins or banana bread pancakes in the house, I can know that they are grabbing something to eat before heading off to school each day.

After weeks of eating the same breakfasts over and over though, I get the urge to change things up for them. Enter the breakfast parfaits.

Now, what is fun about these parfaits is that you can use your favorite flavor of yogurt, granola, and your choice of fruit. Just think of all the possibilities there are in making these cute jar treats!

I buy a large container of vanilla Greek yogurt to keep in the refrigerator, a box of ready-made granola, and bags of different frozen fruits. The night before, I ask whom would like a yogurt parfait, then what fruit they want the next morning. Scoop everything into the jars in layers and close it up. Breakfast is ready in minutes, the night before.

One thing to keep in mind about these parfaits is that they really do not keep very long in the refrigerator. The fruit and yogurt will make the granola soggy after more than a day in there.

I recommend making them right before bed and eating them the next morning.

Another thing you could do if you wanted to make more for the week is to layer the fruit and yogurt and then add the granola right before eating. Just remember to leave room in the jar for it. 

Ingredients

  • 1 cup vanilla greek yogurt
  • 1/2 cup granola
  • 1/2 cup halved frozen cherries

Directions

  1. Spoon half the yogurt into 2 small canning jars. Top with half the granola and half the fruit. Repeat layers. Close each jar with a lid and refrigerate. 

Notes

  • Do not make more than 1 day in advance or the granola will get soggy.
