Cooler weather and fall is here. It is time for comfort food that is quick and easy. Because right around the corner, the holiday season will be upon us. I have no idea how we got to his point, it seems like just a month ago we were starting the new year.

This time of year is so busy for everyone, getting a quick dinner on the table is more important than ever. Just because you only have 20 minutes does not mean you can't make a home-cooked meal. In fact, it is times like these that sitting around the table as a family, is more important than ever.

I love using pasta for a quick dinner. You can cook the pasta and prepare the sauce at the same time. So when the pasta is done, dinner is ready. To make artichoke and sausage pasta, all it takes is a few minutes to brown the sausage and artichokes. Then add the cream, season and heat through. You really cannot get any easier. Top with Parmesan cheese to make it even better. This makes a lot of pasta, so you can feel a huge crowd, or the leftovers make a great lunch the next day.

Artichokes are a staple in my pantry. My husband absolutely loves them, and I am becoming a big fan of them as well. Artichokes are a quick and easy way to add flavor and veggies to any dish. Grilled artichokes, chicken & bacon pizza and spinach & artichoke stuffed shells are two of our other favorite way to use artichokes. Most of the time my 9 year old cannot even tell they are in there, unlike some other veggies, so I can feel good that he is actually getting something good for you.

Ingredients

  • 1 pound penne, or rigatoni
  • 2 teaspoons olive oil
  • 1/2 cup onion, finely chopped
  • 2 cloves garlics, minced
  • 12 ounces ground italian sausage
  • 14 ounces artichoke hearts
  • 1 cup half and half, or heavy cream
  • 1 tablespoon butter
  • 2 teaspoons black pepper
  • 1/4 cup parmesan cheese
  • 1/2 teaspoon crushed red pepper flakes

Directions

  1. Cook pasta according to package directions.
  2. In a large skillet heat olive oil over medium high heat. Add sausage, onions, and garlic. Use a spatula to break up the sausage. Cook for 5-6 minutes until golden brown and cooked through. Add the artichokes, and mix to combine.
  3. In a 2 cup measuring cup combine half-and-half, butter, Parmesan cheese, black pepper, and red pepper flakes. Pour into sausage mixture. Heat until it starts to boil. Add cooked pasta and toss to combine. Season with additional salt and pepper if desired.
  4. Serve immediately topped with additional Parmesan cheese if desired.
