I'm not always a patient person. Once I have a craving or set my mind on something, I'd like it as close to now as possible. My other half and my daughter are completely fooled, often praising me for being so patient.
Waiting to be seen by a doctor or even in a checkout line with an armload of new clothes, I smile calmly and wait for my turn. On the outside. I'll spend an hour using the electric lint remover on my favorite sweater and slowly inspect each inch for lint, but on the inside I'm secretly wishing there was a Fiverr gig for tasks like this.
Steak is one of my favorite savory foods and I hate waiting until the main course to enjoy it. So instead of waiting for the main course, this steak recipe is an appetizer. This recipe instructs you to prepare steak while the mushrooms cook, but I've used leftover steak for this recipe. If you grill extra steak one day and make this appetizer the following day, that totally works.
The best part of these steak and mushroom appetizer skewers is enjoying pieces of juicy beef with mushrooms cooked in beer before dinner. Why wait? Let's start with steak!
Even I can admit patience pays off, but if we can have something we love sooner instead of later, I say let's go for it. Would you agree?
My first time in the kitchen with my mother-in-law was definitely an exercise in patience. She very carefully measured each ingredient and took her sweet time. I watched her scrape the bowl clean, pouring batter into cake pans and using a spatula to make sure every little drop of batter made it into the pan. I tried to hint that she could be done because I had never in my life seen anyone spend so much time scraping a bowl like she did that day. She refused to be rushed. "No waste. We use it all," she said.
She brought up a good point and I resolved to be more careful and a little more patient. On most days I do alright with this resolution. Mostly.
The hardest things to wait for are cinnamon rolls, new episodes of my favorite TV shows, sleep-in days and dessert. Add steak to that list. Especially if mushrooms are involved.
The mushrooms in this recipe are also a great topping for whole steaks and homemade burgers. Simmered with butter and dark beer, these mushrooms are unforgettable.
Fans of these skewers, myself included, insist the blue cheese is a must because it brings the mushrooms and steak together with the sauce in perfect harmony. You're going to love these!
Steak & Mushroom Appetizer Skewers Recipe
Ingredients
- 8 tablespoons butter, divided
- 16 ounces crimini mushrooms
- 1 12 ounce bottle of dark beer, use your favorite, like black butte porter
- 1 1/4 pounds sirloin steak
- salt and pepper, to taste
- garlic salt, to taste
- blue cheese, for topping
Directions
- Preheat a large stovetop pan on medium heat. From settings 1-10, I use 6.
- Also preheat your oven to 350°F.
- Melt 6 tablespoons of butter, then add the mushrooms, stirring to coat with butter.
- Cook mushrooms for 10 minutes uncovered.
- While the mushrooms are cooking, preheat a stovetop pan that is also oven-safe for the steak. Use the same heat setting as the mushroom pan.
- Season both sides of the steak with salt, a tiny bit of pepper and a little garlic salt.
- After the pan is preheated, add the remaining 2 tablespoons of butter, then cook the steak for 3 minutes each side.
- Next it's time to transfer the steak to the oven and bake it for about 20-25 minutes or until steak is cooked according to your preference. The steaks I usually buy for these skewers are one inch thick and 20 minutes will produce a rare to medium rare steak.
- After the mushrooms have cooked in the butter for 10 minutes, it's time to pour in the beer.
- Stir and cook for 30-35 minutes, still uncovered, or until sauce begins to thicken. It will reduce and make a sauce to coat the mushrooms.
- Remove the pan from the heat.
- Once the steak is finished, let it rest for 5-10 minutes.
- Transfer the steak to a cutting board and cut steak into cubes.
- Add the cubed steak to the mushroom pan and stir together, coating in the remaining sauce.
- Assemble your skewers, arrange on a serving tray and top with crumbled blue cheese.
- Make more skewers, approximately 60, and smaller portions by pairing one piece of steak with one piece of mushroom. For less skewers arrange two pieces of steak and two mushrooms per skewer, making about 30.

Notes
- Leave small mushrooms whole, medium mushrooms cut in half and large cut in quarters.
