There was a time when I wouldn't fully remove the seeds from jalapeños and just make poppers with a super spicy kick. Not many people would eat them but I sure loved 'em. Some didn't care for not and spicy at all so mini sweet pepper poppers are for you if you vote thumbs down on the heat of a jalapeno for poppers.
My daughter and I spend a lot of time in the kitchen together. She isn't always in the mood for cooking like I usually am but she's a good sport about helping when I delegate. Naturally I have to promise some good snacks and bacon is a bonus.
Making mini sweet pepper poppers opened the world of poppers to her since she avoids all things jalapeño. With cheese, bacon and peppers what's not to like?
I did have one suggestion (from a friend) who suggested adding red pepper flakes for just a little heat. Some might say it defeats the purpose of using mini sweet peppers but others might like the idea. Just putting that idea out there for you just in case you want to give it a try!
This is one of those appetizers that look really involved but doesn't take a lot of time to put together. I've tested it for fun and with a crowd and it's actually really easy to delegate when your friends come over and say "can I cook with you?" I love it when they ask because I always overload myself with a big menu and need a few extra hands. Do your friends and family offer to help you out in the kitchen?
I did have a few leftovers once and they were beyond awesome chopped up and cooked with scrambled eggs for a remarkable breakfast burrito.
Mini Sweet Pepper Poppers Recipe
Ingredients
- 8 ounces cream cheese
- 1 cup shredded cheese
- 1 1/2 teaspoons garlic salt
- 15 slices bacon, uncooked and cut in half
- 15 mini sweet peppers, sliced in half, seeds removed
Directions
- Preheat oven to 400°F.
- Mix cream cheese, shredded cheese , and garlic salt until thoroughly combined.
- Spoon cream cheese mixture into halved mini sweet peppers and press into the peppers so it's somewhat even.
- Wrap one half-piece of bacon around each halved mini sweet pepper, holding together with a wooden toothpick.
- Place on a baking sheet lined with a silicone mat or parchment paper.
- Bake for 25 minutes.
