In just a few short days, I'll be off for my summer vacation to London and I.Can't.Wait. Of course, by the time you read this, I'll already be back for quite some time!
There's a lot going on there right now, and I won't get into that, this is a place for food, not politics. What I will get into is food and drink instead. Just like the story I told you about my brioche doughnuts, I eat a lot on vacation. It's unusual for me to visit a place a second time - there's just so much to see in the world, and so I like to make the best of my time there.
My goal in London? To find Pimm's. But not just Pimm's No. 1. I know I can that anywhere, but did you know that they make other variants? You'll of course have to check back and see if I had success locating them, but for now I'm sending myself off with a Pimm's cocktail other than Pimm's Cup.
Don't get me wrong, I love it, and I'm sure I'll drink plenty, but there are most definitely plenty of ways to get your fix!
Seeing that Pimm's is a liqueur with a gin base, why not make it into what I consider summer's other most refreshing cocktail, the gin and tonic - or rather - Pimm's and Tonic!
During the warmer months I like to switch to an easy, go-to cocktail that requires minimum work or thought. As fun as a Pimm's Cup is, there's work involved to do it right.
You still that botanical flavor with bonus effervescence from the tonic in this cocktail. Just pour over ice and go! It's the perfect get-home-from-work-and-pour-yourself-a-drink drink. Save the Cup for the weekend, this is the put your feet up and people watch while sitting on your front porch type drink.
Pimm's and Tonic Recipe
Ingredients
- 1 ounce pimm's no.1 liqueur
- 1 ounce gin
- tonic water
- lime wedge
- cucumber slices, for garnish, optional
Directions
- In a highball or rocks glass pour in the Pimm's and gin and fill with ice.
- Pour over the tonic until it reaches the top of the glass, squeeze the lime wedge over the tonic and stir.
- Serve with an extra wedge of lime and cucumber slice for garnish.
