My husband is a hot pepper fanatic. I mean, I like hot stuff, y'all. But he obsesses over it. To the point that we have anywhere from 5-7 exotic hot pepper plants growing in and around our house most of the time. And then I have to make 5657635764 batches of this Cherry Bomb Chicken because what else are you going to do with that many hot peppers?

Also — I should clarify that when I say "hot peppers" I am not including jalapeños. We have scary mutant peppers over here like Butch T Trinidad Scorpions and Carolina Reapers.

Also. Do you even know how many hot peppers one plant puts off? It's like a billion. What do you even do with a billion crazy hot peppers? These are tropical plants, so now I know why Jerk Chicken is so popular in the Caribbean.

So I did NOT incorporate peppers that will melt your face off into breakfast. I suppose you could substitute if you are feeling brave. But for the rest of us that just like a little sweet heat, I made bacon with jalapeños and brown sugar.

It's basically a rub that gives your bacon even more flavor (I know — did you think that was even possible?). The cinnamon gives a little oomph. It's just a hint. The jalapeños shine.

AND! It's really super simple to make people think you just did something ahhhmayzing. Because they've been over here making just plain bacon their whole lives. Oh hey though — a quick hint before I go — please please please wash your hands after you make the jalapeño brown sugar. Don't like…  mix it up and then touch your eyeballs or anything.

Brown Sugar Jalapeño Bacon Recipe

Ingredients

  • 1 pound thick sliced bacon
  • 1/3 cup light brown sugar
  • 1/4 teaspoon cinnamon
  • 1-2 medium jalapeños, finely minced

Directions

  1. Preheat the oven to 375°F. Line a baking sheet with foil. Parchment paper also works well.
  2. Lay the bacon slices out in a single layer on the prepared baking sheet.
  3. Mix together the brown sugar and cinnamon in a bowl. Then work in the diced jalapenos by hand. Rub the bacon with the brown sugar, turn each slice over and run that side too.
  4. Bake for 12-15 minutes, depending on how crunchy you like your bacon. 
  5. Lay the bacon on parchment paper to cool and drain. It will stick to paper towels!

Notes

  • WASH YOUR HANDS THOROUGHLY after making the jalapeno brown sugar mixture and rubbing the bacon. Please take care not to touch your nose, eyes, or other sensitive skin until you are sure there's no more pepper residue on your hands.
