Homemade Thin Mints

I loved being a Girl Scout.   Every year I couldn't wait until it was cookie time and I could begin my door to door sales pitch!  I would tirelessly trudge through the Midwestern cold or rain, it didn't matter.  I was on a mission.

Now that I live in Los Angeles, I've found the Girl Scout sales are a bit different.  Instead of going door to door, they often set up shop outside my local grocery store or book store.  After all those years of generous neighbors buying box after box from me, I have to return the favor.  I always look to see what they have, but in the end the decision is always the same – Thin Mints.

Keep reading for the recipe…

However, girl scout cookie season only comes once a year.  What happens when you have a Thin Mint craving off season?  That's where this recipe comes in.  With only 3 ingredients, you can re-create this classic cookie at home.  (And yes, they also taste great straight from the freezer!)

Homemade Thin Mints

1 bag (12 oz) semi-sweet chocolate chips

1/2 teaspoon pepermint extract

1 box chocolate wafer cookies

Place chocolate chips in a microwave safe bowl.  Microwave on high in 30 second intervals, stirring after each time, until melted.  Stir in peppermint extract.  Dip or spread melted chocolate on wafer cookies.  Cool completely on a wire rack.
