Panzanella is a great way to take day-old bread and enjoy it in a new way.  In this pasta salad, I love the crunch of the Panzanella croutons and diced cucumber along with the soft "Boccocini" fresh mozzarella cheese balls and the delicate heirloom cherry tomatoes. Orichette pasta is the ideal choice for this particular salad because the shape of these "little ears" cradles the Italian dressing.  Plus, they are about the same size as the tomatoes and mozzarella balls, making for the perfect forkful every time!
