Cherry Ice Cream Pie

As I said in yesterday's post, right now I am packing up all my essentials on the West coast and heading East.  I am leaving the land of perpetual summer for the seasonal weather of New York City.  I think this recipe somehow feels like summer, but can be enjoyed all year long.  It's a very unique pie that will keep you curious bite after bite.

Start with a pre-baked 9 inch pie shell.  Then, inside the prepared crust, you will bake a cocoa meringue layer.  (Imagine a chocolate flavored Pavlova inside a pie.)

Meanwhile you create a rum-flavored cherry pie filling to spoon over the cocoa meringue layer once it is completely cooled.  Finally, scoops of vanilla ice cream adorn the top.  I decided to use a slightly smaller ice cream scoop and line the rim of the pie shell.  (This helped cover little cracks or imperfections that occur when the meringue is baking.)
