5 Minute Ice Cream Topping

When the weather gets cooler, you can still have ice cream, right?  Of course!  I am obsessed with all the seasonal flavors of ice cream you can get right now – pumpkin, cinnamon, gingerbread and more.

This crispy ice cream topping is made on the stovetop in about 5 minutes,  and takes your dessert to a whole new level!

I call it an ice cream topping, but this Oatmeal Crunch Topping is versatile.  It can be sprinkled over yogurt or tossed with your favorite fruit as well.

Oatmeal, brown sugar, nuts and cinnamon toast in a skillet on the stove top and is golden brown in just about 5 minutes.  Once it has cooled, you can store it in the refrigerator for up to 2 months.

The best part?  Each tablespoon only has  39 calories, 3 grams carbohydrate, 1 gram protein,  and 2 grams fat!
