Horseradish-Chive Mashed Potatoes

Side dishes are where you can get creative.  Play a little.  On big holidays like Thanksgiving, no one wants you to mess with the turkey, but it's fun to improvise a bit when it comes to the sides.

The heat from these Horseradish-Chive Mashed Potatoes certainly lends itself well to beef main dishes, but it can be just as exciting along side a Thanksgiving turkey!

The idea here is simple.  Fold in a few tablespoons of creamy horseradish into your traditional mashed potatoes for an exciting zing.  I like to garnish with chives for color, and you can also feel free to chop them up and fold into the potatoes as well.
