Great-Great Grandma's Iowa Prune Cake
1 cup granulated sugar
1/2 cup butter, softened
2 eggs
1-1/2 cups all purpose flour
1 teaspoon baking soda
1/2 teaspoon salt
1/2 teaspoon cinnamon
1/4 teaspoon nutmeg
1/4 teaspoon allspice
1/2 cup prune juice
1 cup cooked prunes, cut fine
Frosting:
2 cups confectioner's sugar, divided
2 Tablespoons butter, softened
2 Tablespoons prune juice
1 Tablespoon lemon juice
1 teaspoon cinnamon
1/4 teaspoon salt
1/3 cup toasted chopped walnuts
Heat oven to 350 degrees. Grease and flour a 9-inch baking pan.
For cake: Cream together sugar and butter until light and fluffy. Add eggs, one at a time, beating well after each addition. Gradually add flour and soda and beat until combined. Add cinnamon, nutmeg, allspice. Gradually add prune juice and mix until well blended. Stir in prunes. Spoon batter into prepared baking pan. Bake for 25-30 minutes or until cake springs back when touched in the middle. Cool completely before frosting.
For frosting: Cream together 1 cup of confectioner's sugar with butter. Gradually add remaining sugar and juices. Beat until smooth and creamy and of spreading consistency. Add cinnamon and salt and mix well.
