Perfect Beef Tenderloin

The centerpiece of a family meal at Christmas time is supposed to be a show stopper.  Something special that when you bring it to the table it elicits ooh's and ahh's all around.   A beef tenderloin or "Chateaubriand" is always sure to impress.

Before investing in this pricey cut of meat, make sure you have a fool-proof method for preparing it at home.  This aptly named recipe for "Perfect Beef Tenderloin"  won't disappoint!

A whole beef tenderloin is slathered with butter and roasted in the oven for 20 minutes.  It is then covered in a basting sauce of scallions, butter, soy sauce, Dijon mustard, pepper and dry sherry.  After another 20 to 25 minutes it is cooked to the perfect medium-rare.

Carve into 1-inch slices and serve with a classic horseradish cream sauce.
