A whole beef tenderloin is slathered with butter and roasted in the oven for 20 minutes. It is then covered in a basting sauce of scallions, butter, soy sauce, Dijon mustard, pepper and dry sherry. After another 20 to 25 minutes it is cooked to the perfect medium-rare.
Carve into 1-inch slices and serve with a classic horseradish cream sauce.
