Easter Trail Mix for Your Little Bunnies

Easter is so much more fun now that I have kids. It was always an enjoyable holiday – church and lots of time with family. And of course I have fun memories of growing up and having our hair curled for church and searching for our Easter baskets. My dad always hid the baskets in the hardest places – he once hid my sister's basket in the fireplace!

Now that I have kids, I'm excited to carry on traditions and start our own. My daughter is three and last year was the first year we hid eggs for her around the house and she just had an absolute blast finding them.

The trick for me is to find things that I don't mind her eating. This Easter snack mix would definitely fit the bill. It's still a treat, but it's not 200 eggs filled with jelly beans and malted milk eggs (although I do love both of those things!).

Last year we did some eggs with fun hair bows, some with stickers, some with raisins, some with peanuts and some with chocolate chips. I know it's not super Easter-y and not incredibly exciting, but she absolutely loved it. This year I might have to throw in some of this snack mix.

I used fun bunny graham crackers in an assortment of honey, chocolate chip and chocolate. They were more or less made for an Easter snack mix. I also threw in some pistachios for green color and dried apricots to kind of look like carrots. And then of course, no snack or trail mix is complete without chocolate! I went with Cadbury Mini Eggs – milk chocolate eggs coated in pastel colors perfect for Easter.

This snack mix has everything you want in a snack or trail mix. It has crunchy crackers, salty nuts, CHOCOLATE, and chewy dried fruit.

You'll love it and so will your kids if it makes its way into any Easter baskets or eggs!

Ingredients

  • 7 ounce package annie's homegrown bunny graham friends, about 3 cups
  • 1 cup pistachios, shelled, roasted and salted
  • 1 cup milk chocolate cadbury mini eggs
  • 1 cup dried apricots, chopped (you can cut them into strips to look like carrots)

Directions

  1. Put all ingredients into a large bowl and mix gently until combined. Serve!

Notes

  • If preparing ahead, the Bunny Grahams may soften slightly. You may want to add them just prior to serving.
