The Rachel Sandwich: Rueben's Sweeter Cousin

I have to confess I do not like the sandwiches I make for my family. They are boring. My husband eats his on the fly in the car, so that eliminates anything messy like tuna salad or even tomatoes. My kids like plain sandwiches as in no condiments and no cheese.

Can you imagine? Sometimes I look at them incredulously and wonder if they are really my kids! Not one of them has developed my taste for flavor!

Each morning, I pack dull sandwiches for my family and then I send them on their merry way. Then the fun begins. I make myself some REAL sandwiches for lunch! Sandwiches loaded with flavor like this Jalapeno Chicken Grilled Cheese or even this Fontina and Nutella Grilled Cheese!

See what I mean?  Sandwiches that go beyond cheese and mayo! Sandwiches with sustenance! These sandwiches are adventurous and daring! I like to live on the edge.

The problem is, each time I create a new sandwich, the recipe seems to yield two.  I devour one "gourmet" sandwich and then glance down at its partner sitting there all alone. At that point, the only thing to do is eat that one too.  It would be cruel not to eat it right? There's the rub my friends. My waistline is expanding with each new deli creation. I'm willing to live with that I guess. That's why yoga pants were invented.

This sandwich takes a few minutes to prepare. Make the slaw first, that way the flavors have some time to come together. The dressing is so easy to throw together and would be wonderful on so many other foods.  The spiced dressing is balanced perfectly by the apple-flavored slaw, and creamy Havarti cheese holds it all together.

Ingredients

  • 4 slices light rye bread
  • 2 teaspoons butter
  • 6 slices deli turkey breast, thick
  • 4 slices havarti cheese
For the Apple Slaw:
  • 1 cup cole slaw mix
  • 1/4 cup apple, very thinly sliced
  • 2 tablespoons apple cider vinegar
  • 1 tablespoon olive oil
  • 1 tablespoon honey
For the Dressing:
  • 1/4 cup plain greek yogurt
  • 1 tablespoon mayonnaise
  • 1 tablespoon sriracha chili sauce
  • 1/2 teaspoon horseradish
  • 1/4 teaspoon paprika

Directions

  1. In a small bowl, combine slaw mix and apple.  Add vinegar, olive oil and honey.  Toss to gently coat.  Set aside.
  2. In a separate small bowl, combine dressing ingredients and set aside.
  3. Heat a large grill pan over medium heat.  Butter bread with a ½ teaspoon of butter.  Place two bread slices face down on grill pan.  Top each bread slice with 3 slices of turkey and two slices of Havarti cheese.  Add half of the slaw mix to each sandwich and add half the dressing to each sandwich.  Top with remaining bread slice (buttered side up).  Brown sandwich for 2-3 minutes on each side or until golden brown.
