Watermelon and Feta

Watermelon and Feta Recipe

Ingredients

  • 3 pounds Seedless Watermelon, with rind, about 2 pounds without
  • 1 tablespoon Fresh Mint, chopped
  • juice from half a Lemon
  • 2 ounces Feta Cheese, crumbled

Directions

  1. Remove the rind from the watermelon and cut into 1-inch cubes.
  2. Place in a large bowl and add the mint and lemon juice. Toss to distribute and taste if additional lemon juice is needed.
  3. Sprinkle the feta on top of the salad and serve.
