Ingredients - 3 1/2 cups Almond Flour
- 1 teaspoon Baking Soda
- 1 teaspoon Salt
- 1/2 cup Coconut Oil, melted and cooled
- 1/2 cup Honey
- 2 Eggs
- 1 teaspoon Pure Vanilla Extract
- 1 cup Paleo-friendly Chocolate Chips, like Enjoy Life
- 1 cup Unsweetened Coconut Flakes
Directions - Preheat oven to 375°F. Line 2 baking sheets with parchment paper.
- In a mixing bowl, whisk together almond flour, baking soda, and salt.
- In a separate bowl, use an electric mixer to beat together coconut oil and honey. Add eggs and vanilla and beat until combined. Beat in almond flour mixture until fully incorporated. Use a rubber spatula to fold in chocolate chips and coconut.
- Drop heaping tablespoons of dough onto the prepared baking sheets.
- Bake 8 - 10 minutes, until cookies are light golden brown, rotating the sheets halfway through. Let cookies cool slightly before transferring to a wire rack to cool completely.
- Repeat with remaining dough.
